Description
Before the advent of canning, people preserved food through labor-intensive drying, curing, smoking, or fermenting processes. The invention of canning in Maine in the 1850s changed diets.
The directions for Honey Drop brand's Maine peas included emptying "peas and liquor into a pan. Heat to proper serving temperature without stirring. Drain liquor off the peas, add salt, pepper, and butter to taste."
