The Summer Kitchen, Westport Island, 1966

Description

The Tarbox homestead and out buildings were photographed in January 1966 when operating as the Summer Kitchen. The homestead is known as of 1972 as the "Squire Tarbox Inn". Samuel Tarbox (1780-1861) was the original owner.

Eleanor Harriman Siebert (later Smith) bought and completely restored the Tarbox homestead in 1956. She and her sister, Mary Harriman Wright, created the restaurant, The Summer Kitchen, drawing on recipes used by Westport housewives since colonial times. Their motto was "Old Time Maine Cooking of Distinction," and their specialties took advantage of fish from local waters, local berries and farm-fresh produce.
