Description
Part of the Home Economics students' education included planning for and hosting formal dinners to develop their skills in menu planning, food preparation, hostessing, and waitressing. This photo of a group of guests, (which often included faculty, staff and spouses), is dining in the Home Ec Cottage. The guests included Miss Lockwood, Dr. and Mrs. Dearborn, Miss Havey, Miss Mades, Miss Adams, Mr. Roberts, Miss Clifford, , Mr. Hilferty, Miss Wehling, Mrs. Tilton, Miss Grant, Miss Churchill, Miss Leland, Miss Dudley, Miss Rackliffe, and Miss Brewer. The meal was a smorgasbord and included stuffed celery, olives, sardines, dill pickles, pickled pears, peaches, baked salmon loaf, carrot pudding, red jelly salad, green jelly salad, cabbage salad, pumpernickel, coffee cake, and Swedish buns. The guests' desserts included cream puffs, jelly roll, spritz, and Swedish coffee.
