Hanging herring in McCurdy’s Smokehouse, Lubec, 1989

Description

Herring, after being pickled in heavy brine, were strung by hand on wooden "stringers," 40 inches long. At the smokehouse one man handed two stringers at a time through the door-like windows while another hung them on the beams.

Smoky fires built atop gravel on the floor smoked the herring, with window adjustment controlling circulation and draft. Note the herring visible through these partially open windows.
