These dessert recipes offer the author's suggestions and alternate ingredients, such as using new milk in place of heavy cream.
Most of the dishes and desserts in this book have two or three different versions of the recipe, which was not uncommon during this time period, as there was often new technology and ingredients available in the kitchen. Some of the recipes, such as the one for ice cream, are somewhat vague and therefore easy to personalize with different flavors.
