Ah, les Fameuse Ployes!

Ployes Sandwich

Ployes Sandwich

As kids growing up in the St. John Valley, picking potatoes for a nearby farmer and his family was a rite of passage. Though it was was hard work, we so enjoyed the various lunchbox surprise our Moms would prepare for us.

Perhaps of greatest appreciation was sandwich goodies wrapped in ployes! Not that dank white bread one finds on a store shelf mind you, but a light, airy pancake with buckwheat as its main ingredient. If we were lucky, desert was fruit rolled up with a ploye and dipped in homemade maple syrup.

What a delicious treat that lives on to this very day (minus the picking, of course). Manger, manger, les enfants!
